    Easy Goulash

    Ours is similar, except penne or bowtie or both. We leave out the Rotel, olives & mushrooms and use Velveeta cheese. About to eat some now!!

      Never had it with olives and shrooms. May have to try that out.

        Was one of my favorite when I was a kid duck hunting out here
        One of my uncles made the best
        Chunks of beef, onions, garlic, potatoes and sweet Hungarian Paprika
        Slow cooked till the beef was fall apart tender

        Has to have homemade bread to sop with
        Twilight Zone Refugee

          I remember as a kid my mom making this one night for dinner after a late evening at the little league baseball fields. I thought she just threw together whatever she had in the pantry at the time and made a meal out of it. Didn't realize at the time, this would be a staple go-to for me and the family 35 years later.

          Hamburger meat
          Elbow pasta
          Can of diced tomatoes
          Two jars of mushrooms (I like mushrooms)
          Chopped onions (if I'm the only one eating it)
          A bag of shredded cheese

          Ground the beef and drain
          Add the tomatoes, mushrooms, and onions to the beef - season as needed (salt, pepper, garlic powder, onion powder, Italian seasonings, etc.) - bring back to simmer
          Boil the pasta
          Add it all together
          Add half bag of cheese and mix to blend
          Add rest of cheese to the top and let it melt

            This and beef stroganoff were my favorite recipes of mom's that didn't involve steak or chicken.

            Her goulash was very similar to this, except for the cheese. My dad loved sharp cheddar cheese and her goulash was about the only thing the kids would stand with sharp cheese in it.

            Goulash and corn pone pie has always been 2 of my favorite meals. may have to do CPP this weekend.
