    Grilled Chicken Mop Sauce wanted

    Going to grill some yard bird tomorrow

    Don't need the exact recipe, just the main ingredients

    Looking for one that doesn't have tomato sauce

    Start early
    Low and slow then your favorite bbq sauce toward the end is how I do it so not much help.
    Enjoy the yard bird how ever you do it.

      never really sopped chikn... I like to char it skin down first to start a crisp skin
      and then skin up to finish
      plent of fat under the skin to stay moist
      maybe try some lard and vinegar

    Try a Zesty Italian salad dressing. The cheaper the better. Something like HEB's house brand.

      Lemon. beer. onion vinegar vegetable oil in a small pot heat it up and let blend together.

        I put the mustard straight on the meat as a binder for the rub.

            I did a lot of research on this

            I think I came up with a keeper

            Dry rubbed the skinless chicken with Tony's

            Grilled dry till about 3/4 done

            then applied the mop sauce

            Czech's Chicken MopSauce

            1/4 C minced onions

            1TBS lemon juice

            1Tbs vinegar

            2 Tbs Mayo

            2Tbs oil

            1tsp preped mustard

            a little beer,

            No need to simmer it,. to be made fresh when needed

            Worked purdy good on sausage too

              any sop/mop sauce comes down to 2 main things.. fat and acid..
              my brisket sop is melted lard and white vinegar.
              .minced onions and lemon juice, but those are just flavorings

            I know the ship has sailed on this for this batch, but if you can find it on-line, Aaron Franklin's mop sauce for his smoked chicken is really good and not complex at all. I think I have it written in my recipe minion app.

              Since when is a Little beer ever involved with what you do?

              and

              What is this skinless chicken, the crispy then mopped skin is the best part after all.

                It is rare that I cook without an opened beer nearby
                It's even rarer that I will use a little in what's being cooked

                I find skinless chicken gets flavored to the bone without it
                It does not go to waste, I render Schmaltz out of it

                  I have Steve H recipe but he will have to give it out

                  Here are 5.. Like said before its the same basic ingredients and what you add along the way.


                  1. Texas Mop Sauce

                  Ingredients:

                  2 cups your fav BBQ sauce

                  12 cup apple cider vinegar

                  14 cup water

                  1 or 2 tablespoon Worcester

                  1 teaspoon crushed red pepper flakes

                  Instructions: Mix all ingredients in a bowl. Apply to your meat every 30 minutes during the grilling process.

                  2. Spicy Apple Cider Mop

                  Ingredients:

                  1 cup apple cider vinegar

                  12 cup apple juice

                  14 cup hot sauce

                  1 tablespoon brown sugar

                  1 teaspoon black pepper

                  Instructions: Combine all ingredients in a pot and simmer for 10 minutes. Brush onto meat every 20-30 minutes while grilling.

                  3. Herb-Infused Butter Mop

                  Ingredients:

                  12 cup melted butter

                  14 cup lemon juice

                  2 tablespoons fresh thyme leaves

                  1 tablespoon minced garlic

                  Salt and pepper to taste

                  Instructions: Mix all ingredients. Mop onto meat every 30 minutes for a rich, herbaceous flavor.

                  4. Sweet & Tangy Mustard Mop

                  Ingredients:

                  12 cup yellow mustard

                  14 cup apple cider vinegar

                  2 tablespoons honey

                  1 tablespoon Worcestershire sauce

                  1 teaspoon black pepper

                  Instructions: Whisk together all ingredients. Apply to meat every 20-30 minutes for a sweet and tangy finish.

                  5. Beer and Garlic Mop

                  Ingredients:

                  1 cup beer (lager or pale ale)

                  14 cup apple cider vinegar

                  2 tablespoons olive oil

                  1 tablespoon minced garlic

                  1 teaspoon black pepper

                  Instructions: Combine all ingredients and brush onto meat every 20-30 minutes while grilling.

                  6. Hot Honey BBQ Mop Sauce

                  Ingredients:

                  1 cup honey

                  12 cup ketchup

                  18 cup apple cider vinegar

                  18 cup white vinegar

                  1 tablespoon Worcestershire sauce

                  1 teaspoon cayenne pepper

                  2 teaspoons red chili pepper flakes

                  Instructions: Mix all ingredients in a saucepan and simmer for 10 minutes. Apply to meat every 30 minutes for a sweet, heat sticky glaze.
